In The Vignyard

The GROSSOT winery owns 18 hectars of vines (100% Chardonnay) in Chablis AOP and the 1er Crus Fourneaux, Vaucoupin, Fourchaume and Mont de Milieu. All the wines are produced from their own vines (no negoce) and they work in organic farming since 2002, certified in 2020 (2019 vintage) and for Chablis 1ers crus they do manual harvest.

At the winery

The vinifications are made only with natural yeasts.
The wines are aging in stainless steel vats and french oak barrels of 228L.
Bottling happens only after 10 to 20 months of aging for the Chablis
and between 14 to 17 months for the 1ers crus.
